Twice Baked Potato Casserole

Ingredients

  • 8 medium sized baking potatoes, baked OR 1 1/2 pkg frozen mashed potatoes heated with 1/2 cup milk
  • 1 cup shredded Cheddar cheese, divided
  • 1 (16 oz) container sour cream
  • 1 (8 oz) pkg cream cheese, softened
  • 1/2 cup milk
  • 1/2 cup butter or margarine, melted
  • 2 cloves garlic, minced
  • 1 Tbsp chives
  • 1 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

If using fresh potatoes, peel and coarsely mash potatoes and stir in next nine ingredients. If using frozen, just add the next nine ingredients and mix. Spoon into a lightly greased 9x13 inch baking dish. Bake at 350º for 30 minutes until thoroughly heated. Remove and sprinkle bacon and shredded cheese on top in a diagonal pattern.
