Ingredients
- 1-3/4 cup all-purpose flour
- 1/2 cup Sugar
- 2 tablespoon poppy seeds
- 2 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1 cup skim milk
- 3 tablespoon vegetable oil
- 1 tablespoon lemon rind; grated
- 1 tablespoon lemon juice
- 1 egg; lightly beaten

Preparation
Step 1
Combine first 5 ingredients in a large bowl; make a well in the center of
mixture. Combine milk and next 4 ingredients; stir well. Add to dry
ingredients, stirring just until moistened.
Divide batter evenly among 12 muffin cups coated with cooking spray. Bake
at 400°F for 25 minutes or untili golden. Remove from pans immediately; let
cool on a wire rack.
