Lemon Butter Talapia

Ingredients
- 4 frozen talapia loins or fillets
- 1 tbsp finely chopped fresh parsley
- 1/2 tsp ground paprika
- 1/2 tsp crushed red pepper
- 4 tbsp butter
- 2 garlic cloves, finely chopped
- 2 tbsp olive oil
- 1 lemon, peel grated, quartered

Preparation
Step 1
Thaw talapia in the refrigerator, overnight for 8 hrs.
Preheat oven to 375 F. Lightly butter the bottom of a shallow baking dish.
In a small bowl, combine parsley, paprika and red pepper.
Melt butter in a small pan over medium heat. Add garlic and oil, then remove from th heat.
Place talapia in the baking dish. Baste with half of the butter/garlic/olive oil mixture. Sprinkle with half of the parsley/paprika/pepper mixture.
Bake for 8 minutes. Remove from the oven and baste the talapia with the remaining butter/garlic/olive oil mixture. Sprinkle with remaining spice mixutre. Return to the oven and bake for 6 to 8 minutes, or until the fish flakes easily with a fork.
