cup fresh orange juice
cup brown sugar
tsp. orange rind
cup fresh cranberries (I'm sure you could also use frozen)
Boil potatoes in their skins until barely tender. Peel, slice thickly and arrange in a large buttered baking dish. In a saucepan, mix remaining ingredients. Bring to boil and simmer, uncovered for 5 minutes. Pour over sweet potatoes and bake, uncovered, at 350º for 20 to 30 minutes, until glazed and hot.
