Key Lime Bread
This bread is baked in a loaf pan and has the texture of a pound cake. It is light AND TANGY SWEET LIKE A BIT OF SUNSHINE IN YOUR MOUTH!
Ingredients
- FOR THE GLAZE:
- 1 STICK OF BUTTER
- 1 CUP OF SUGAR
- 2 EGGS AT ROOM TEMPERATURE
- 2 TBSP. OF LIME JUICE
- 1 TBSP. OF LIME ZEST
- 1 & 1/2 CUPS OF AP FLOUR
- 1 tsp. OF BAKING POWDER
- DASH OF SALT
- 1/2 CUP OF WHOLE MILK AT ROOM TEMP.
- 2 TBSP. OF LIME JUICE
- 1/2 CUP OF POWDERED SUGAR

PRE-HEAT YOUR OVEN TO 350 DEGREES. COMBINE THE DRY INGREDIENTS IN A SMALL BOWL AND SET ASIDE. IN A LARGE MIXING BOWL, CREAM THE BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. ADD THE EGGS ONE AT A TIME. BEAT IN THE LIME JUICE AND ZEST. ADD THE DRY INGREDIENTS A LITTLE AT A TIME ALTERNATING WITH THE MILK. pOUR THE BATTER INTO A GREASED LOAF PAN AND BAKE IN THE CENTER OVEN RACK FOR ABOUT 45 MINUTES (DEPENDING ON YOUR OVEN). iF YOU STICK A KNIFE OR TESTER IN THE CENTER AND IT COMES OUT CLEAN, IT IS DONE. cOOL 10 MINUTES THEN REMOVE FROM THE PAN TO A WIRE RACK. mIX THE GLAZE AND DRIZZLE ON TOP. tHIS SHOULD BE SLICED WITH A SERRATED KNIFE/BREAD KNIFE ONCE COOLED.
