  • 4 cups fresh cauliflower flowerets
  • vegetable cooking spray
  • 1 1/2 TB cornstarch
  • 1 1/2 cups skim milk
  • 1/2 cup (2 oz) shredded reduced fat sharp Cheddar cheese
  • 1 1/2 TB grated Parmesan cheese, divided
  • 1/8 tsp dry mustard
  • 1/8 tsp pepper
  • Dash of ground nutmeg
  • 1 TB fine, dry breadcrumbs

Preparation

Step 1

Arrange cauliflower in a vegetable steamer over boiling water. Cover; steam until crisp tender.

Transfer to an 11x7x2 inch baking dish coated with cooking spray; set aside.

Combine cornstarch and milk in a small saucepan, stirring well. Cook over medium heat, stirring constantly, until thickened. Stir in Cheddar cheese, 1 TB Parmesan cheese, mustard, pepper, and nutmeg; cook mixture until cheese melts, stirring constantly.

Pour sauce over cauliflower; sprinkle with remaining Parmesan cheese and breadcrumbs. Broil 5 1/2 inches from heat 5 minutes or until lightly browned and bubblly.
