Mama's Oven Fried Chicken

  • 1 3 pound fryer chicken, cut up
  • 1/4 cup shortening
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 cup margarine



Step 1

Heat oven to 425.
In oven, melt shortening and margarine in a 13x9x2 baking pan.
Mix flour, salt, paprika and pepper.
Coat chicken pieces well with flour mixture.
Place chicken skin side down in melted shortening.
Cook uncovered for 30 minutes.
Turn chicken and cook 30 minutes longer or until fork tender.
