Ingredients
- TOPPING:
- 1/2 C packed brown sugar
- 1/3 C all-purpose flour
- 1 tsp cinnamon
- 2 Tbsp butter, melted
- BATTER:
- 2-1/4 C all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 C buttermilk
- 1/2 C butter, melted
- 1 tsp vanilla
- 1-1/2 C packed brown sugar
- 2 C diced apples

Preparation
Step 1
1. Preheat oven to 375 degrees.
2. Mix all topping ingredients together until mixture forms crumbs.
3. In a separate bowl, whisk together egg, buttermilk, butter, and vanilla.
4. Stir in sugar.
5. Without mixing, add flour, baking soda, salt, and apples.
6. Stir until just combined. Do not overmix.
7. Spoon into prepared muffin pan and sprinkle with topping.
8. Bake at 375 for 20 minutes or until firm to touch.
9. Rest for 10 minutes before trying to remove muffins.
