  • 1 1/2 cups flour
  • 1 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 4 eggs, room temperature
  • 1 1/2 cups canola oil
  • 1/2 tsp pure vanilla extract
  • 2 cups grated carrots
  • Cream Cheese frosting



Step 1

1. Preheat oven to 350. Sift together the first 9 ingredients into mixing bowl. Beat eggs with a electric mix master until batter becomes thick and pale yellow, about 3 minutes. Slowly beat in oil and vanilla. Add wet ingredients to the dry and mix until combined. Fold in carrots.
2. Por batter into two greased 8" round cake pans lined with parchment paper. Bake 35-40 minutes or until a toothpick inserted in the center of the cake comed out clean. Allow layers to cool completely before icing with your favorite cream cheese frosting
