New England Apple Bean Bake

Ingredients

• 2 cans Great Northern Beans, drained
• 2 T butter or margarine
• 1 1/2 c cubed tart cooking apple (peeled)
• 1/4 c chopped onion
• 1/3 c light brown sugar
• 1/4 c ketchup
• 1/2 t cinnamon
• 1/2 t salt (or to taste) and fresh ground pepper

Preparation

Step 1

Melt butter in a large skillet. Add the apples and onions. Cook, stirring occasionally, for 10 mins, or until the apples are tender.

Add brown sugar to skillet. Stir until dissolved. Stir in the ketchup, cinnamon and salt. Place beans in a 2 quart casserole dish. Pour the apple mixture over the beans and mix well. Bake in a preheated 375 oven for 1 hr. Serves 4.
