Ingredients

  • 1 cup flour
  • 1 cup yellow cornmeal
  • 2 tblsp sugar
  • 2 tsp baking powder
  • 2 tsp minced fresh thyme
  • 2 tsp minced fresh chives
  • 1 1/2 tsp grated lemon rind
  • 1/2 tsp salt
  • pinch of pepper
  • 1/2 cup drained can corn
  • 1 cup plain yogurt
  • 3 tblsp vegetable oil
  • 1 tblsp water
  • 1 beaten egg
  • Vegetable cooking spray

Step 1

Combine first 9 ingredients in a large bowl; stir well. Add corn; stir well. Combine yogurt, oil, water and egg and add to flour mixture stirring just until dry ingredients are moistened. Spoon batter in 2 loaf pans coated with cooking spray. Bake at 400 for 25 minutes or until a wooden pick inserted in center comes out clean. Remove from pan; cool on a wire rack.
