Chicken Saute with olives

Ingredients

  • 1 T olive oil
  • 4 boneless, skinless chicken half breasts
  • 1/4 C orange juice
  • 2 T white wine vinegar
  • 2 T sliced green olives
  • 2 T fresh chopped parsley
  • 2 T sliced almonds
  • 1 Clove garlic, minced
  • 1 T slice black olives
  • 1 large green bell pepper (red or yellow can be used instead of the green if desired)
  • 1 tomato, diced
  • 3 C hot cooked rice

Step 1

Heat oil in large skillet over medium-high heat until hot. Add chicken; cook 6 to 8 minutes on each side. Remove the chicken and cover. Reduce the heat to medium; add orange juice, vinegar, green olives, parsley, almonds, garlic and black olives to the skillet and stir 2 to 3 minutes.

Serve the chicken on a bed of rice, topped with the olive, vegetable mixture.
