Ingredients

  • 1 medium sized head of cauliflower
  • pinch of salt
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 2 Tbsp almond meal
  • 1 Tbsp olive oil
  • 1 egg
  • 3 Tbsp finely grated parmesan cheese (optional)
  • pre-cooked pizza toppings of your choice

Step 1

Preheat your grill or oven to 450F.
Chop up the cauliflower florets until you get a coarse, rice-like texture (you can use a food processor if it's easier). Place it into a microwave-safe bowl and microwave (without adding water, as the cauliflower will release moisture) for 5 minutes. Once it's ready, pour the cauliflower out onto a clean kitchen towel and (once it's cooled off a little), wring out as much moisture as possible.
In a bowl, combine the cauliflower, salt, oregano, garlic powder, almond meal, parmesan (if using) and olive oil. Make a little well in the cauliflower, crack the egg in, beat the egg with a fork, and then incorporate it into the other ingredients.
Form the dough into a ball and place it on a greased, parchment-lined baking sheet. Spread the dough out into a round, crust-shape (roughly 1/4inch or more thick) and bake it in the preheated oven for about 11 to 14 minutes.
Remove it from the oven, top your pizza with whatever toppings you feel like, and then bake it again for 4-5 minutes!
