Ingredients
- 3 cups (1/2-inch) cubed watermelon
- 2 tablespoons chopped fresh mint
- 2 tablespoons finely chopped sweet onion
- 2 teaspoons minced jalapeño pepper
- 1 small clove garlic, minced
- 2 tablespoons fresh lime juice
- 1 1/2 teaspoons salt, divided
- 1/4 cup butter
- 4 (4- to 6-ounce) tilapia fillets
- 1 teaspoon ground black pepper

Preparation
Step 1
In a medium bowl, stir together watermelon, next 5 ingredients, and 1/2 teaspoon salt. Cover and refrigerate until ready to serve.
In a large nonstick skillet, melt butter over medium-high heat. Sprinkle tilapia with pepper and remaining 1 teaspoon salt. Cook for 5 minutes per side or until fish flakes easily with a fork.
Serve topped with watermelon salsa.
