Ingredients
- 1 lb. ground beef
- 1 17 1/2 oz. jar enchilada sauce, divided
- 2 cups shredded cheddar cheese or mexican blend, divided
- 10-12 flour tortillas

Preparation
Step 1
In a skillet, cook beef until no longer pink; drain. Stir in 1/2 cup sauce and 1 cup cheese. Warm tortillas according to package directions. Spread 1/2 cup sauce in a 13x9" baking dish. Spoon about 2 Tbsp. meat mixture down center of each tortilla. Roll up and place seam-side down in baking dish. Top with remaining sauce and cheese. Bake at 350 for 20 minutes or until cheese melts.
