LIME HONEY MUSTARD DRESSING

Ingredients

• 1/4 C rice vinegar or white wine vinegar
• 1 shallot, finely chopped
• 2 T finely chopped cilantro
• 1 1/2 t Dijon mustard
• 1 1/2 t honey
• Grated rind of 1 lime
• 1 t fresh lime juice
• 1/2 t grated peeled fresh ginger
• 1/2 t salt
• 1/8 t coarsely ground black pepper
• 1/4 C extra-virgin olive oil
