Ingredients
- 1 cup flour
- ½ cup butter
- ¼ cup icing sugar
- Top Layer
- 2 Tbsp flour
- 1 cup sugar
- 2 eggs
- 1 Tbsp lemon juice
- 1 tsp grated lemon rind
- ½ tsp baking powder
- ½ cup chopped dates
- ½ cup fine coconut

Preparation
Step 1
Cream butter and sugar, mix in flour until smooth. Spread in ungreased 8 x 8 pan. Bake 350 for 15 minutes.
Top Layer – Beat eggs until light, add sugar, juice, rind, flour and baking powder. Mix well. Stir in dates and coconut. Spread over baked bottom layer. Bake at 350 for 20 minutes. Cut while warm.
