Ingredients
- 1 large onion, chopped
- 1 cup celery, chopped
- 3-4 cups diced potatoes
- 2 cups carrots, sliced
- 1 cup brown lentils
- 8 cups water
- 1 large can diced tomatoes
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 1/2 tsp dried basil
- 1/2 - 1 package frozen chopped spinach

Preparation
Step 1
Saute carrots and celery in olive oil until tender
Then add potatoes, lentils, salt, and water.
Cook 30 minutes until all tender.
Add tomatoes, basil, and spinach.
Cook until spinach cooked and soup hot
Equals 1,372 calories total
