Ingredients
- 8 Lean Pork Chops
- 1 1/2 Tbsp. Margarine
- 1 Large Onion, Finely Chopped
- 3 Stalks of Celery, Finely Chopped
- 1 Lg Bell Pepper, Finely Chopped
- 1 Tbsp. Hungarian Paprika
- 2 Cloves of Garlic, Crushed
- 2 Cans Chipotle Chilies Tomatoes
- 8 Potatoes, Peeled and cubed
- 24 Ounces of Sour Cream
- 6 Tbsp. Flour
- Salt and Pepper to Taste

Step 1
Dice pork chops and potatoes and set aside. In a large pot melt margarine; sauté onion, celery, and bell pepper until soft. Add paprika, garlic, tomatoes, salt and pepper. Add pork chops and potatoes; cook over medium heat until pork chops and potatoes are tender. In a medium bowl blend sour cream and flour until smooth. Stir into pork chops and potatoes. Cover and simmer for ten minutes. Add a small amount of water if the sauce is too thick. Serve over rice or with bread like a stew.
