Low Carb Egg with Bacon Salad

  • 1/2 c finely chopped celery
  • 1/3 c mayo
  • 2 T fresh tarragon or 1 T parsley and green onions
  • 2 t Tabasco Pepper Sauce
  • 1/4 t salt
  • 8 hard boiled eggs, peeled and coarsely chopped
  • 6 c mixed salad greens
  • 4 slices bacon, cooked and crumbled
  • 12 cherry toratos, halved



Step 1

Combine celery, mayo, tarragon, Tabasco, and salt in a bowl and mix well. Add eggs and mix gently. Divided salad greens between four plates; place a scoop of egg salad on each and sprinkle bacon on top. Garnish with tomatoes.
