Ingredients

  • Frosting:
  • 2 Cups Sugar
  • 1 1/4 veg oil
  • 3 Eggs
  • 2 TSP Vanilla Mix well and set aside
  • 2 1/4 Cups Flour
  • 2 TSP Cinnamon
  • 1/4 TSP Nutmeg
  • 1/4 TSP Allspice
  • 2 TSP Baking Soda
  • 1 TSP Salt
  • 2 Cups Shredded Carrots
  • 2 Cups Flaked Coconut
  • 8 oz. Crushed Pineapple (drained)
  • 1 Cup Chopped Pecans
  • 1 Cup Raisins
  • 16 oz of Cream Cheese
  • 2 TSP Vanilla
  • 1 lb Box Confection sugar
  • Dab of Milk - to the tecture you want
  • Mix together

Preparation

Step 1

Mix sugar, oil, eggs and vanilla together. Mix remaider ingredients in separate bowl and then all together.

Bake for 50 minutes in 2 - 10 inch pans or 3 - 8 inch (adjust time)
