Ingredients
- 2 Pork Tenderloins
- 1/3 cup Soy Sauce
- 4 Tbsp Sherry (can use white wine)
- 2 Tbsp Honey
- 1 tsp minced Ginger Root (I usually use more)
- 1 Clove of Garlic, minced (I usually use more)
- Dipping Sauce: 3 Tbsp dry mustard – 1-2 Tbsp water

Preparation
Step 1
Trim any fat or loose bits from the tenderloin.
Combine soy sauce, sherry, honey, ginger and garlic; pour into a plastic bag with the tenderloin.
Tie shut, place in a bowl or plate – marinate in fridge 8 – 24 hours, turning occasionally.
Remove pork from marinade. Place on a rack in a baking pan. Cover loosely with foil. Roast at 325 F for 20 minutes.
Brush with marinade. Bake uncovered about 30 minutes more.
Cool and slice thinly for serving.
