Classic Chicken and Grape Salad

Ingredients

  • 3 1/2 lb. boneless, skinless chicken breasts, poached just until tender
  • 5 ribs celery, coarsely chopped
  • 1 1/2 cups seedless green grapes, cut in half
  • 1 1/2 tsp. dried thyme
  • 1 1/2 tsp. garlic powder
  • salt and pepper to taste
  • 3 cups (or as needed) Hellmann’s mayonnaise
  • Add Curry to taste

Step 1

Cut cooled chicken breasts into 3/4 to 1 inch chunks, removing and discarding any tough tendons. Toss chicken, celery, and grapes together in a large bowl. Season with thyme, garlic powder, salt and pepper. Bind the salad with the mayonnaise (Use a lot of mayonnaise to make the salad very moist and creamy.) Transfer to a serving bowl and refrigerate covered for at least one hour before serving.
