Twice-Baked Potato Casserole

Ingredients

  • 1 1/2 pounds red potatoes, baked
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound sliced bacon, cooked and crumbled (I used ready-cooked bacon.)
  • 3 cups sour cream
  • 2 cups shredded mozzarella
  • 2 cups shredded cheddar cheese
  • 2 green onions, sliced

Preparation

Step 1

Cut baked potatoes into one inch cubes. Place potatoes in a greased 9 x 13 dish. Sprinkle with the salt, pepper and bacon. Top with the sour cream and cheeses.

Bake, uncovered, at 350 for 20 to 25 minutes.

Can be made ahead and refrigerated, but return the dish to room temperature before baking.
