Spicey Thai Cucumber Salad

Ingredients

  • Dressing:
  • 1 large or 2 med. cucumbers, sliced thin
  • 1 red or white onion, thinly sliced
  • 1-1/2 serrano chili, finely sliced or in rings
  • handfull chopped cilantro
  • fresh chopped mint, if you have it...optional
  • 3 TBS peanut oil
  • 1 TBS sesame oil
  • 1/2 cup rice wine vinegar
  • 2 TBS soy sauce
  • 1 TBS hot chili oil or sembal olek
  • juice of 1 freshly squeezed lime
  • 1/4 cup sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 - 1/2 cup finely chopped unsalted dry roasted peanuts, pistachios or TJ's spicey roasted nuts

Preparation

Step 1

Blend all the dressing ingredients together. Fully dissolve the sugar.
Mix in all of the chopped vegetables and cilantro/mint
Add more of any of the flavors that you prefer, which is the true Thai way.
the longer this marinates, the better!
I like the contrast and crunch of the nuts..so I add the nuts just at serving. If they marinade with the dressing for a few hours, they tend to loose the crunch and get soft. I just sprinkle the nuts on as I serve.
