Ingredients
- Dressing:
- 1 large or 2 med. cucumbers, sliced thin
- 1 red or white onion, thinly sliced
- 1-1/2 serrano chili, finely sliced or in rings
- handfull chopped cilantro
- fresh chopped mint, if you have it...optional
- 3 TBS peanut oil
- 1 TBS sesame oil
- 1/2 cup rice wine vinegar
- 2 TBS soy sauce
- 1 TBS hot chili oil or sembal olek
- juice of 1 freshly squeezed lime
- 1/4 cup sugar
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 - 1/2 cup finely chopped unsalted dry roasted peanuts, pistachios or TJ's spicey roasted nuts

Preparation
Step 1
Blend all the dressing ingredients together. Fully dissolve the sugar.
Mix in all of the chopped vegetables and cilantro/mint
Add more of any of the flavors that you prefer, which is the true Thai way.
the longer this marinates, the better!
I like the contrast and crunch of the nuts..so I add the nuts just at serving. If they marinade with the dressing for a few hours, they tend to loose the crunch and get soft. I just sprinkle the nuts on as I serve.
