Scallop and Scallion Pasta

Ingredients
- 1 lb. scallops
- 3 scallions (or 1 chopped onion)
- 2 tbsp. butter
- 2 tbsp. olive oil
- 1 cup dry white wine
- 1 tsp. dried crushed basil
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
- 1 lb. whole wheat linguine
- 1/2 grated parmesan or Romano cheese

Preparation
Step 1
Saute scallions in butter and olive oil until tender. Stir in wine, basil, salt and pepper. Bring to a boil and reduce heat.
Cook 12-15 minutes or until 2/3 of the liquid evaporates.
Add scallops and simmer for 5 minutes or until tender. If you are using large scallops, cut them in half to make 2 "pucks" that will cook more evenly and be easier to eat. Do not overcook.
Cook pasta and put on plate with a drizzle of olive oil. Add scallop mixture and sprinkle with hard grated cheese.
