Ingredients

  • 5 lbs russet potatoes - washed
  • sweet onion - chopped finely
  • salt
  • pepper
  • mayonnaise

Preparation

Step 1

Place washed whole potatoes in large pot. Boil till easily pierced but still firm. Let cool. Pull off skin and cut up into chunks. Put one potato at a time in a small bowl; add a little salt, pepper, onion and some mayonnaise to cover. Mix until potato is covered. Place in larger bowl and repeat with remaining potatoes. Once all potatoes are done carefully stir all potatoes in large bowl.
