Penne Pasta with Vodka Sauce

Ingredients
- 3 tablespoons butter
- 2 cloves garlic,chopped
- 1(28 ounces) can peeled tomatoes,drained adn pureed in processor
- 1/2 teaspoon crushed red pepper
- 1 cup heavy cream
- 1/3 cup vodka
- 1 tablespoon fresh parsley
- 1/2 teaspoon salt
- 1/2 cup grated fresh Romano cheese
- 1 pound cooked penne pasta

Preparation
Step 1
In a large skillet(large enough to hold 1 pound of cooked pasta), melt the butter and add garlic. Saute until the garlic is soft and golden. Add the pureed tomatoes and red pepper and cook over medium-high heat until it begins to thicken. Add vodka and simmer for a few minutes until alcohol begins to burn off. Stir in cream,salt,pepper, and parsley. Saute the sauce until slightly thickened. Toss the prepared pasta with the grated cheese. Pour vodka sauce over pasta and toss until well-coated with the sauce. Serve immediately. Makes enough sauce for 1 pound of pasta.
