Brussels Sprouts with Bacon

Ingredients
- 6 slices bacon, chopped
- 2 Tbs extra virgn olive oil
- 4 shaollots, chopped
- 3 lbs Brussels sprouts, trimmed, small sprouts left whole, larger sprouts halved
- Salt & Pepper to yout taste
- 2 cups chicken broth

Preparation
Step 1
Brown bacon in skillet over medium high heat. Remove bacon to paper towel lined plate. Add extra-virgin olive oil to same skillet with bacon drippings. Add shallots to pan and saute approx. 2-3. Add sprouts and stir together. Season with S & P. Cook sprouts approx 5 minutes or until they begin to soften, then add broth. Bring to a boil, cover and reduce hear to medium low Cook 10 minutes or until tender. Transfer sprouts to a serving dish with a slotted spoon to remove excess broth and top with bacon bits.
