Chocolate Brownie Cherry Bon Bons
- Chocolate Fudge Filling:
- 2 jars maraschino cherries (10oz each)
- 4 squares unsweetened chocolate
- 3/4 cup butter
- 2 cups granulated sugar
- 4 eggs
- 1 tsp. vanilla
- 1 cup all-purpose flour
- 3 squares unsweetened chocolate
- 1 pkg. (3 oz) cream cheese, softened
- 1 tsp. vanilla
- 1/4 cup corn syrup
- 1 cup powdered sugar
- 1/2 cup powdered sugar
- reserved cherry juice
Preheat oven to 350. Microwave chocolate and butter in a large bowl on high 2 minutes or until mostly melted. Stir until completely melted.
Stir granulated sugar into melted chocolate/butter mixture. Add eggs and vanilla, mix until well blended. Stir in flour. Fill greased mini-muffin tins about 2/3 full. Bake 12 mins. or until toothpick in center comes out with fudgy crumbs. This is very important as you do not want to over bake. Cool slightly in pans. Loosen edges with knife if necessary and slide onto wax paper covered surface. Make a half inch indentation in center of each bon bon. Let cool completely.
Prepare chocolate fudge filling while brownies cool. Melt chocolate in a small bowl on high 1-2 mins. or until almosted melted, stirring after each minute.
Beat cream cheese and vanilla in small bowl until smooth. Slowly pour in corn syrup, beating until well blended. Add chocolate, beat until smooth. Gradually add powdered sugar, beating until well blended and smooth. Put into a cake decorating bag fitted with a #6 round tip. Pipe filling into hole in center of bon bon.
Drain cherries, set aside. Reserve a little liquid. Take the 1/2 cup powdered sugar and add enough reserved cherry liquid to make a thin glaze. Top each bon bon with a cherry and lightly drizzle glaze over the top of each.
