Ingredients
- 1 yellow onion, grated
- 1.5 tsp salt
- 1/4 tsp pepper
- 2 eggs, lightly beaten
- 1/4 cup matzo meal or flour
- 2 lbs russet potatoes (4 large), peeled and grated
- vegetable oil for frying

Preparation
Step 1
In a large bowl, combine onion, salt and pepper. Add eggs, stir until mixed. Add matzo meal, stir until mixed. Add potatoes, toss until combined and evenly coated.
Fill a large skillet with 1/2 inch oil. Place over medium heat until oil is almost smoking. Working in batches, spoon about 2 tbsp better into oil for each latke. Lightly flatten. Cook, turning once, until golden on each side, 2-3 minutes. Using a slotted spatula, transfer to a paper towel lined rack to drain. Repeat with rest of batter. Serve with sour cream and applesauce.
