Broccoli Peanut salad

  • 1/4 cup white wine vinegar
  • 3 Tbsp canola oil
  • 3 Tbsp peanut butter
  • 1 Tbsp reduced sodium soy sauce
  • 1/2 tsp salt
  • 1 pound broccoli
  • 1/4 c dried cranberries or raisins
  • 1/4 cup chopped roasted peanuts

Step 1

Whisk together vinegar, oil, peanut butter, soy sauce and salt. Toss with broccoli, and dried fruit. Serve with roasted peanuts.
