Warm Banana Cakes with Chocolate Sauce
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 1/2 cups mashed ripe banana (about 3)
- 2 large eggs
- 1/2 cup milk
- 1 tsp. vanilla extract
- Chocolate Sauce:
- 1 cup whipping cream
- 8 oz. bittersweet, not unsweetened chocolate, chopped
- vanilla ice cream
Preheat oven to 350º. Whisk together flour, baking soda, baking powder and salt in medium bowl. Whisk sugar and oil in large blow to blend. Add mashed bananas and eggs and whisk to blend well. Add flour mixture and whisk just until combined. Whisk in milk and vanilla. Divide between eight 3/4 cup custard cups. Place on baking sheet and bake until tester inserted comers out clean, about 25 minutes.
For chocolate sauce, bring cream to simmer in heavy, medium saucepan. Remove from heat and add chocolate and whisk until smooth.
Run knife around sides of cakes, then loosen. Invert warm cakes onto plates and pour chocolate sauce over top and serve with ice cream.
