Ingredients
- 1 ½ cups all purpose flour
- 2/3 cup sugar
- 1 tsp baking soda
- 1/8 tsp salt
- ¼ cup quick cooking oats, uncooked and divided
- 1 cup mashed ripe banana (about 2 medium)
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- 1 egg, beaten
- Baking spray with flour

Step 1
Combine flour, sugar, baking soda, salt, and 3 TB oats in large bowl, stir well. Make a well in center of mixture. Combine mashed banana and next 3 ingredients in a bowl; add to dry ingredients. Stir just until dry ingredients are moistened.
Spoon batter into an 8-inch square baking pan coated with baking spray. Top with remaining tablespoon oats. Bake at 350 for 30 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack.
