Bean or Carrot Casserole

Ingredients

  • Topping:
  • about 6 servings
  • about 4 c. cut up beans or carrots
  • 2Tbsp butter
  • 1 tsp salt
  • 1 tsp sugar
  • 2 Tbsp flour
  • ¼ tsp pepper
  • 1 onion, finely chopped
  • 1 c. sour cream
  • 2 Tbsp. Melted butter
  • ¾ c. dry bread crumbs or corn flakes or rice crispies
  • ½ lb. Cheddar cheese grated

Preparation

Step 1

Cook the beans or carrots until almost done.
Melt butter. Stir in salt, sugar, flour, pepper and onion.,
Add the sour cream and mix well, then heat through.
Fold in the drained vegetables and put all in a buttered casserole or flat baking pan.

For the topping, mix the crumbs with the melted butter, then with the cheese. Sprinkle over the top of the beans or carrots. Bake at 400 for 20 min. or more moderate temp for longer.
