Ingredients

  • 4 large red potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 tablespoons margarine
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon seasoning (Tony's)
  • red pepper to taste
  • 1 13 oz can chicken broth
  • 1/3 teaspoon basil
  • 1/3 cup potato flakes
  • 1 pint half & half

Preparation

Step 1

Peel & dice potatoes small. Saute onions in margarine. Add potatoes and cook about 10 minutes. Stir often. Add seasoning, chicken broth & basil. Cover and simmer until potatoes are tender. Stir frequently. Add half and half and potato flakes. Heat, but don't boil.

Garnish with grated cheese, bacon bits and chives.

You can use half fat-free Pet milk and regurla or low fat milk. Use more potato flake to make it a thicker consistency.
