Creamy Cucumber Salad

Ingredients

• 1 English cucumber
• 1 tsp salt
• half red onion, thinly sliced
• 1/3 cup sour cream
• 3Tbsp lemon juice
• 1 Tbsp sugar
• 1 Tbsp chopped fresh dill (or 1/2 tsp dried dill weed)

Preparation

Step 1

In colander, toss cucumber with salt; let stand for 30 minutes or until softened. Rinse under cold water; drain well. Meanwhile, in a bowl of cold water, soak onion for 30 minutes, drain. In a salad bowl, whisk together sour cream, lemon juice, sugar and dill. Add cucumber and onion; toss to coat.
