Ingredients

  • 4 cups frozen hash brown potatoes or fresh cut up potatoes cooked until almost done
  • 2/3 cup buttter (1 stick + 3 Tbsp.)
  • 6 cups milk
  • 1 tsp. salt or to your own personal taste
  • 2/3 cup plain flour
  • 1/2 tsp. pepper
  • 4 green onions,chopped (optional)
  • 1/2 crumbled bacon
  • 1 cup grated cheese

Step 1

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Add pepper. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly to prevent sticking, until mixture has thickend and bubbly. Add potatoes, salt, green onions, crumbled bacon and cheese. Cook until thoroughly heated. Stir in sour cream; add extra milk if necessary for desired consistency. Serve by sprinkling with some more green onions, more bacon and cheese if desired.
