Ingredients
- Soup:
- 10 medium potatoes
- 1 medium onion, chopped
- celery and carrots, chopped
- 1/3 cup oleo melted
- 3 tbsp. flour
- 1 qt. milk
- Dumplings:
- 1/2 cup flour
- 1 tbsp. oleo
- 1 egg beaten
- 2-4 tbsp. milk

Preparation
Step 1
1.) Peel and cut potatoes into small chunks. Add onion, celery and carrots. Cover with water and add salt. Cook until tender (about 1/2 hour.)
2.) Melt oleo and stir in flour. mix until smooth. Stir in potatoes and add milk. Bring to a boil. Lower heat to simmer. Cook at least 45 minutes stirring occasionally.
3.) DUMPLINGS: Make 15 minutes before serving. Cut oleo into flour, blend in egg. Add only enough milk to make mixture thin enough to drop into hot soup. Drop by dabs using teaspoon. Cook 10 minutes. Serve.
