Old Fashioned Southern style Potato Salad

Ingredients

  • 6 cups cubed potatoes 6-7 medium
  • 2 hard boiled eggs
  • 1/4 cup onion finely chopped
  • 1/4 cup celery seed
  • 1/8 cup sweet relish
  • 1/8 cup sweet pickles finely chopped
  • 1/2 cup mayonnaise
  • 1/2 tbsp parsley
  • 1/2 tsp prepared mustard
  • 1/2 tsp sugar
  • 1/2 cup salad dressing
  • dash of Louisiana hot sauce
  • Dash of garlic salt
  • Salt and pepper to taste

Preparation

Step 1

Place potatoes in a large pot, cover with water and bring to a boil, cooking until tender. Place eggs in another pot and allow to boil. While potatoes and eggs are cooking, combine onion, celery seed, sweet relish, pickles, mayonnaise, parsley, mustard and sugar. Mix well. Drain and cool potatoes, peel and then cut into cubes. Pour mixture over potatoes; toss to coat. Add salad dressing, hot sauce, garlic salt, salt and pepper; toss again. Peel eggs under cool water and slice. Lay egg slices evenly over potato salad. Sprinkle with paprika and chill in refrigerator for 2 hours.
