Ingredients
- 1/4 C+ 2 T flour
- 1/4 C + 1 T Parmesan cheese
- 2 T finely chopped parsley
- 2 cloves minced garlic
- Salt & pepper
- 2 lge eggs
- 1 1/2 lb turkey tenderloin, cut into 4 pieces, pounded
- 2 T butter
- 2 t olive oil
- 1 lemon, quartered

Preparation
Step 1
Mix flour, salt, pepper, Parmesan, parsley & garlic. In shallow bowl, beat eggs.
Gently pound turkey pieces to 1/3" thick. Dip turkey in egg, then roll in flour mixture.
In large skillet, melt 1 T butter in 1 T olive oil. add turkey & cook over mod-hi heat until browned & just cooked, @ 3 min per side. Serve with lemon quarters.
