Fresh Spinach Salad

Ingredients

  • 6 fresh mushrooms, sliced
  • 1 tsp. butter, melted
  • 1 lb. fresh spinach, torn into bite size pieces
  • 1/2 cup sliced green onion
  • 1/4 cup olive oil
  • 2 T. white wine vinegar
  • 1 T. lemon juice
  • 1/2 tsp. sugar (optional)
  • 1/2 tsp. salt
  • Dash of pepper
  • 1 hard-cooked egg, chopped
  • 2 slices bacon, cooked and crumbled

Step 1

Saute mushrooms in butter; set aside.

Combine spinach and onion in a large bowl; toss well. Combine next 6 ingredients; mix well. Add dressing and mushrooms to spinach mixture; toss gently. Sprinkle with egg and bacon.
