  • 1 1/2 cups couscous
  • 2 tablespoons nonhydrogenated margarine or whipped butter
  • 1 cup frozen green peas, thawed and steamed
  • 1/3 cup toasted cashew pieces
  • 1/2 cup dark raisins
  • Salt and freshly ground pepper to taste

Preparation

Step 1

1 Boil 3 cups water. Pour the water over the couscous in a heatproof container. Cover and let stand for 15 minutes, then fluff with a fork.
2 Add the remaining ingredients and stir well. If the mixture needs more moisture, stir in a small amount of water, and serve.
