Oatmeal Cookies with Raisins

  • 1 cup all purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 1 stick unsalted butter, room temperature
  • 2/3 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup raisins



Step 1

1. Preheat oven to 350, lined cookie sheets with parchment paper
2. Sift floor, baking powder, baking soda, cinnamon and salt
3. Beat butter and sugars till pale and fluffy. Mix in egg and vanilla, then flour mixture. Mix in oats then raisins
4.Using i tablespoon, drop dough, spacing two inches apart
5. Bake until edges are golden about 14 minutes
6. Let cookies cool on wire rack
7. When cool, store in a container with wax paper between layers
