Sweet Potato Soup

Ingredients

• 1 Tbsp each butter and oil
• 1/2 a Spanish onion,coarsely chopped
• 2 medium sweet potatoes,diced
• 1 tsp curry powder
• 5 c boiling vegetable broth
• 1 19 oz can white beans,rinsed and drained
• 1 Tbsp balsamic vinegar
• 1 Tbsp maple syrup
• Salt and pepper

Preparation

Step 1

Add butter and oil to large saucepan
Add onions and cook over medium heat about 5 min until soft but not brown
Add curry powder and stir 1 min
Add sweet potatoes and cook, stirring for 2 min
Add hot stock
Bring to a boil,reduce heat and simmer 20 min or until potatoes are soft
Add half the beans and puree until smooth
Add remaining beans
Add vinegar,maple syrup ,salt and pepper to taste
