Snickerdoodle Acorn Cakelets

- 1 package snickerdoodle quick bread mix*
- 3 1/2 tablespoons snickerdoodle spread*
- Available at Williams-Sonoma stores.

Step 1
Position a rack in the lower third of an oven and preheat to 350°F (180°C). Grease and flour the wells of an acorn cakelet pan; tap out excess flour.
Prepare the quick bread mix according to the package instructions. Spoon 1 tablespoon batter into each well of the prepared pan, spreading the batter into the top part of each acorn. Bake until a toothpick inserted into the center of cakelet comes out clean, about 10 minutes. Transfer the pan to a wire rack and let the cakelets cool in the pan for 15 minutes.
Using a serrated knife, gently saw off any portion of each cakelet that rose above the edge of the pan. Tap the pan gently on a work surface to loosen the cakelets. Place a wire rack over the top of the pan, invert the pan onto the rack and lift off the pan. Wash and cry the pan and repeat with the remaining batter. Let the cakelets cool completely before assembling.
