Brown Sugar Banana Bread

Ingredients
- 4 Tbl. margarine, softened
- 1/4 cup applesauce
- 2 eggs
- 2 Tbl. skim milk or water
- 3/4 cup packed light brown sugar
- 1 cup mashed bananas (2-3 medium)
- 1 3/4 cup flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup coarsely chopped walnuts or pecans

Step 1
Beat margarine, applesauce, eggs, milk and brown sugar in a large mixing bowl until smooth. Add bananas, blending at low speed. Beat at high speed 1 to 2 minutes longer.
Combine flour, baking powder, and soda and salt; mix into batter. Mix in walnuts. Pour batter into a greased 8x4x2 in loaf pan.
Bake in a 350 degrees preheated oven until bread is golden and toothpick inserted in the center comes out clean, about 35 to 40 minutes.
Cool in plan on wire rack for 10 minutes; remove from pan. Cool to room temperature.
