Crispy Sausage Stuffed Olives

  • Ingredients:
  • ■ 100 Sardo Green Pitted Olives
  • ■ 200 g sausages
  • ■ 200 g all-purpose flour
  • ■ 500 g egg whites
  • ■ 500 g breadcrumbs



Step 1

Method (Preparation):
1. Remove olives from their brine and let soak for two hours
2. Hold olives in water overnight
3. After 24hrs in water, drain and cut olives down the side length-wise
4. Pipe sausage into olives
5. Coat olives in flour, dust off excess, and transfer to egg whites
6. Coat fully in egg whites, remove from egg white and drain excess liquid. Transfer to breadcrumbs
7. Coat fully with breadcrumbs, then repeat the egg white and breadcrumb process again

Method (Cooking):
1. Fry olives in 450 degree oil until golden brown and cooked through
2. Serve 3 olives per portion
