Preparation
Step 1
Preheat oven to 425
Crust:
Cut lard and salt into flour until the size of small peas, not too large. Beat egg, add to cold water and vinegar, stir. Pour over flour mixture. Using big fork, stir into ball. Divide into 2 balls, making 1 slightly larger. Roll 1 out and put in bottom of sheet pan. Spring the bottom with fine bread crumbs.
Filling:
Mix together the brown sugar, flour, cinnamon, and nutmeg in a small bowl. In another bowl, sprinkle apples with the juice of 1 lemon and toss. Stir in the sugar mixture to evenly coat the apples.
Pour filling mixture onto crust and top with butter cubes. Put on top crust and put a few slices of knives to vent. Bake for 45 minutes.
