Ingredients

  • 3/4 lb green beans
  • salt
  • 2 t Dijon mustard
  • 1/2 t garlic, minced
  • 2 T red wine vinegar
  • 4 T olive oil
  • ground pepper
  • 1/8 t cumin
  • 2 T basil or chives, chopped
  • 3 red ripe tomatoes, sliced
  • 1/4 c red onion, finely chopped

Blanch beans. Mix remaining ingredients and add oil slowly. Toss and serve.
